Ingredients:
- 2 medium zucchini
- 1 pound (450g) ground beef
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 1 can (14 ounces/400g) diced tomatoes
- 2 tablespoons tomato paste
- 1/2 cup beef or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese (optional, for garnish)
- Fresh basil or parsley, chopped (for garnish)
Instructions:
‍
1. Prepare Zucchini Noodles:
Using a spiralizer or julienne peeler, create zucchini noodles from the zucchini. Set them aside.
‍
2. Cook Ground Beef:
In a large skillet, cook the ground beef over medium heat until browned. Break it up with a spoon as it cooks.
‍
3. Add Vegetables:
Add the chopped onion, minced garlic, carrot, and celery to the skillet. Sauté for a few minutes until the vegetables are softened.
‍
4. Prepare Bolognese Sauce:
Stir in diced tomatoes, tomato paste, beef or vegetable broth, dried oregano, dried basil, salt, and pepper. Mix well to combine all the ingredients.
Reduce the heat to low and simmer the sauce for about 20-30 minutes, allowing the flavors to meld together and the sauce to thicken. Stir occasionally.
‍
5. Sauté Zucchini Noodles:
While the sauce is simmering, heat a separate skillet over medium heat. Add the zucchini noodles and sauté for about 2-3 minutes until tender-crisp. Be careful not to overcook.
‍
6. Assemble and Garnish:
Divide the sautéed zucchini noodles into serving plates or bowls. Spoon the Bolognese sauce over the zucchini noodles, ensuring each plate gets a generous amount of sauce. Garnish with grated Parmesan cheese (optional) and sprinkle fresh basil or parsley on top.
‍
7. Serve:
Serve the Zucchini Noodles with Beef Bolognese hot, offering a delicious and low-carb twist on a classic pasta dish.
