Vibrant Vegetarian Curry Soup
Delight in the robust flavors of this Vibrant Veggie Curry Soup, a medley of carrots, butternut squash/sweet potato, celery, turnip, red onion, and garlic. Infused with a blend of curry spices and finished with a touch of yogurt and citrusy zing, this soup is a harmonious celebration of wholesome vegetables and aromatic seasonings.
Ingredients:
- 200g carrots
- 200g butternut squash or sweet potato
- 150g celery
- 150g turnip
- 1 red onion
- 2 cloves garlic
- Salt and pepper to taste
- 1 tablespoon curry spice mix
- 1 tablespoon olive oil
- Juice of half a lemon or lime
- 1 dl natural yogurt
Instructions:
1. Peel and dice:
Peel and dice the vegetables - carrots, butternut squash/sweet potato, celery, turnip, red onion, and garlic.

2.Sauté:
In a large soup pot, sauté the vegetables in 1 tablespoon of olive oil over high heat, along with the curry spice mix.

3. Season:
Season with salt and pepper, add 1.2 liters of water, cover, and simmer until the vegetables are tender.

4. Blend:
Stir in the yogurt, then use an immersion blender to puree the soup.

5. Serve:
Season with salt, pepper, and freshly squeezed lemon or lime juice to taste.
