Ingredients:
- 1 cup firm tofu, cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon maple syrup (optional)
- Thinly sliced avocado
- Diced mango
- Cashews
- Corn kernels
- Shredded cabbage
- Sliced bell pepper
- Shiitake mushrooms, sliced
- Edamame beans
- Chives, chopped
- Sliced cucumber
- 1 cup uncooked sushi rice
- 1/2 cup diced vegetables (cucumber, carrots, bell peppers)
- Pickled ginger and wasabi (optional, for serving)
Lemon Sauce:
- Juice of 1 lemon
- 1 tablespoon soy sauce
- 1 teaspoon maple syrup
Instructions:

1. Marinate Tofu:
In a bowl, combine cubed tofu with soy sauce, sesame oil, rice vinegar, and honey (optional). Allow it to marinate for at least 15 minutes.

2. Prepare Sushi Rice:
Rinse 1 cup of uncooked sushi rice under cold water until the water runs clear.
In a rice cooker or on the stovetop, combine the rinsed rice with 1 1/4 cups of water.
Cook the rice according to the package instructions, allowing it to steam until tender and cooked.

3. Cook Tofu:
In a non-stick pan, sauté the marinated tofu until golden brown. Set aside.

4. Prepare Lemon Sauce:
In a small bowl, whisk together lemon juice, soy sauce, and honey (or maple syrup) for the lemon sauce.

5. Assemble Sushi Bowl:
In serving bowls, layer the cooked sushi rice as the base.

6. Add Vegetables and Fruits:
Top the rice with diced vegetables, thinly sliced avocado, diced mango, sliced bell pepper, shiitake mushrooms, edamame beans, chives, and sliced cucumber, cashews, corn kernels, shredded cabbage.

7. Add Tofu:
Place the sautéed tofu on top of the vegetable and fruit layers.

8. Drizzle with Lemon Sauce:
Drizzle the lemon sauce over the sushi bowl.

9. Garnish and Serve:
Garnish with additional chives. Optionally serve with pickled ginger and wasabi on the side.
