Delicious Vegan Stuffed Sweet Potatoes

Ingredients:
- Medium sweet potatoes
- 2 cups chickpeas, cooked or canned
- 1/2 cup cherry tomatoes, halved
- 1/2 cup tomato sauce
- 1/2 cup vegan mozzarella, shredded
- 1 clove of garlic, minced
- 1 spring onion, finely chopped
- 1 tablespoon olive oil
- Salt, pepper, and lemon to taste

Instructions:
1. Preheat Oven:
Preheat the oven to 400°F (200°C)
2. Bake Sweet Potatoes:
