Stress Reliefing Fruit & Oat Cake
Berries such as raspberries, strawberries, blueberries, and blackberries are rich in flavonoids, acting as antioxidants that strengthen our immune system and aid in stress relief. Keeping seasonality in mind, select from a variety of fruits for this breakfast delight, including apples, apricots, blackberries, blueberries, cherries, sour cherries, grapes, peaches, plums, raspberries, strawberries, and pears.
Ingredients:
- 300g mixed seasonal fruits
- 2 tablespoons maple syrup/glycine or other sweetener
- 3 tablespoons arrowroot flour (or 2 teaspoons cornstarch as an alternative)
- Juice of 1 lemon
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract (optional)
- A pinch of sea salt
- 200g rolled oats
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 2 tablespoons maple syrup
- 1/2 cup unsweetened applesauce
- 1 scoop Get Shredded Protein
Instructions:
1. Preparation:
Preheat the oven to 180°C.
2. Prepare the bottom part:
In a large bowl, combine the mixed fruits with maple syrup, arrowroot flour, lemon juice, ground cinnamon, protein powder, and salt. Place this mixture at the bottom of a baking dish.
3. Prepare the top part:
In another bowl, mix rolled oats, ground cinnamon, and salt. Add maple syrup and applesauce using a spoon. Place this mixture on top of the fruity mix in the baking dish.
4. Bake:
Bake at 180°C for 20 minutes, then reduce the temperature to 160°C and bake for an additional 20-25 minutes until the top becomes golden brown.
5. Tip:
If using nuts or seeds instead of oats for a gluten-free option, cover them during the first 20 minutes of baking to prevent burning.
