Red Wine Beef Stew with Wild Rice with Sliced Almond
Indulge in the rich flavors of this Red Wine Beef Stew, accompanied by a unique side of wild rice, which, despite its name, is a grain-like grass. Ingredients:
‍For the Beef Stew:
- 1 large onion
- 800g beef, diced
- 5 tablespoons grapeseed oil or 1 tablespoon duck fat
- 1/2 tablespoon sweet paprika
- 1/2 tablespoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground caraway seeds
- 1 pinch of cinnamon
- 300ml red wine
- Salt and pepper to taste
For the Wild Rice:
- 1 cup wild rice
- 1 handful dried cranberries
- 1 handful toasted almond sticks
- 1/2 liter vegetable broth or purified water
- Salt

1. Beef stew:
In a pot, sauté finely chopped onions in fat until translucent. Add diced beef. Once browned, sprinkle with sweet paprika, salt, and pepper. Pour in a bit of red wine.
Cover and simmer the stew, occasionally adding more red wine or water. Cook the beef slowly for about 3-4 hours until tender and a thick sauce forms.
2. Wild rice:
In a separate pot, cook wild rice in double the amount of vegetable broth for about 45 minutes. In the last five minutes, add dried cranberries.
Toast almond sticks in a dry pan until golden brown.
When the wild rice is done, mix in the dried cranberries and toasted almond sticks.
3. Serve:
Serve the Red Wine Beef Stew over a bed of the flavorful wild rice, and enjoy this hearty and aromatic dish.
