Instructions:
‍
1. Preparation:
Preheat your oven to 350°F (175°C) and grease a round cake pan with cooking spray.
2. Prepare the cake:
In a bowl, whisk together oat flour, chocolate protein powder, cocoa powder, baking powder, baking soda, and salt.
In a separate large bowl, combine Greek yogurt, applesauce, honey or maple syrup, eggs, and vanilla extract. Mix well.
Gradually add the dry ingredients to the wet ingredients, alternating with almond milk, until a smooth batter forms.
Gently fold in half of the crushed Oreo cookies. Place the other half to the bottom of the cake pan.
Pour the batter into the prepared cake pan and smooth the top.
3. Bake:
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
4. Frosting:
While the cake is baking, prepare the frosting. In a blender, combine low-fat cottage cheese, powdered sugar (or glicin), and vanilla extract. Blend until smooth.
Once the cake has cooled, spread the frosting evenly over the top.
Sprinkle crushed Oreo cookies on top for decoration.
