Ingredients:

  • 2 cups whole wheat flour (or flour of your choice)
  • 1 cup protein powder
  • 1 large egg
  • 2-3 tablespoons water (as needed)
  • Pinch of salt (optional)

Instructions:

1. Prepare the Dough:

a. In a large mixing bowl, combine the whole wheat flour and protein powder. Stir to combine.

b. Create a well in the center of the flour mixture and crack the egg into it.

c. Using a fork or your hands, gradually incorporate the egg into the flour mixture until a crumbly dough forms.

d. Add water, 1 tablespoon at a time, as needed to bring the dough together. The dough should be firm and slightly tacky but not sticky.

2. Knead the Dough:

a. Transfer the dough to a clean, lightly floured surface.

b. Knead the dough for about 5-7 minutes, or until it becomes smooth and elastic.

c. If the dough feels too dry, you can add a little more water. If it feels too sticky, sprinkle with a bit more flour.

4. Rest the Dough:

a. Shape the dough into a ball and wrap it tightly in plastic wrap.

b. Let the dough rest at room temperature for about 30 minutes. This allows the gluten to relax and makes the dough easier to roll out.

5. Roll and Cut the Noodles:

a. After resting, unwrap the dough and divide it into smaller portions for easier handling.

b. Using a rolling pin, roll out each portion of dough into a thin sheet, about 1/8 inch thick.

c. Use a sharp knife or pasta cutter to cut the rolled-out dough into thin strips to form the macaroni noodles. You can cut them to your desired length and width.

6. Dry or Cook the Noodles:

a. To dry the noodles: Arrange the cut noodles in a single layer on a baking sheet and let them air dry for about 30 minutes to 1 hour, or until they are slightly firm to the touch. Once dry, they can be stored in an airtight container for later use.

b. To cook the noodles: Bring a pot of salted water to a boil. Add the fresh noodles and cook for 2-3 minutes, or until they float to the surface and are al dente. Drain and rinse with cold water to stop the cooking process.
