Ingredients:

For the Mushroom-Bun:
- Large portobello mushrooms (2 per burger)
- Olive oil
- Salt and pepper to taste
For the Tofu Patty:
- Firm tofu, pressed and drained
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
For the Burger:
- Sliced cheese of your choice (cheddar, Swiss, or plant-based alternatives)
- Lettuce leaves
- Tomato slices
- Red onion slices
- Pickles (optional)
- Burger sauce or your favorite condiments
Instructions:

1. Prepare the Mushroom-Buns:
‍a. Clean the portobello mushrooms and remove the stems.
b. Brush both sides with olive oil and season with salt and pepper.
c. Grill or pan-fry the mushrooms over medium heat until they are tender, approximately 3-4 minutes per side. Set aside.

2. Make the Tofu Patty:
‍a. In a bowl, mix soy sauce, olive oil, smoked paprika, garlic powder, salt, and pepper to create a marinade.
b. Slice the pressed tofu into patties and coat them thoroughly with the marinade.
c. In a non-stick pan, cook the tofu patties over medium heat until they develop a golden-brown crust on each side.

3. Assemble the Burger:
‍a. Place the grilled portobello mushrooms on a plate, gill side up, creating a base for your burger.
b. Stack the tofu patty on top of one mushroom, followed by a slice of cheese to melt.
c. Add lettuce, tomato slices, red onion, and pickles (if using).
d. Finish with the second grilled mushroom on top, creating a mushroom-bun sandwich.
