Ingredients:
For Lentil Soup:
- 1 cup dried lentils
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
For Mixed Greens Salad:
- Mixed greens (lettuce, spinach, arugula, etc.)
- Assorted vegetables (tomatoes, cucumbers, bell peppers, etc.)
- Dressing of your choice
For Serving:
- Whole grain bread, toasted

1. Prepare Lentil Soup:
Rinse the lentils under cold water and set aside.
