Ingredients:

Turkey:

  • 1 turkey (14 to 16 pounds)

Glaze:

  • 1/2 cup honey
  • 1/2 cup Dijon mustard
  • 1-1/2 teaspoons dried rosemary, crushed
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper

Stuffing:

  • 1/2 cup butter, cubed
  • 2 cups chopped onion
  • 1-1/2 cups chopped celery
  • 12 cups unseasoned stuffing cubes or dry gluten-free bread cubes
  • 1 tablespoon poultry seasoning
  • 2 teaspoons chicken bouillon granules
  • 1 teaspoon pepper
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon lemon-pepper seasoning
  • 3/4 teaspoon salt
  • 3-1/4 to 3-3/4 cups boiling water

Instructions:

1. Prepare the Turkey:

Preheat the oven to 325°F (160°C). Place the turkey on a rack in a shallow roasting pan, breast side up. Tuck the wings under the turkey and tie the drumsticks together.

Bake the turkey for 2 hours.

2. Make the Glaze:

In a small bowl, mix together the honey, Dijon mustard, crushed rosemary, onion powder, salt, garlic powder, and pepper to create the glaze.

3. Glaze and Bake the Turkey:

After 2 hours of baking, brush the glaze over the turkey.

Bake for an additional 1-3/4 to 2-1/4 hours or until a thermometer inserted into the thickest part of the thigh reads 170°F to 175°F (77°C to 79°C).

Baste the turkey occasionally with pan drippings. If the turkey browns too quickly, cover it loosely with foil.

4. Prepare the Stuffing:

In a Dutch oven, melt the butter over medium-high heat. Add the chopped onion and celery; cook and stir until tender.

Add the stuffing cubes, poultry seasoning, chicken bouillon granules, pepper, crushed rosemary, lemon-pepper seasoning, and salt. Toss to combine.

Stir in enough boiling water to reach the desired moistness.

Transfer the stuffing mixture to a greased 13x9-inch baking dish. Bake, covered, for 1 hour. Uncover and bake for an additional 10-15 minutes or until lightly browned.

5. Serve:

Remove the turkey from the oven and cover it loosely with foil. Let it stand for 15 minutes before carving.

Serve the turkey with the stuffing and your favorite side dishes.

Tips:

Achieving Golden Brown Turkey:

For a beautifully golden brown turkey, utilize the caramelization from the sugars in the honey glaze. Additionally, apply a layer of fat (such as olive oil or softened butter) across the skin of the entire turkey before baking to seal in moisture and enhance browning.

Customizing the Glaze:

Experiment with different flavors to customize the glaze according to your preferences. While maintaining salt and pepper as base seasonings, try swapping spices and spice blends to create unique variations. Substitute molasses for honey for a richer flavor profile, or explore options like honey-citrus glaze or herb-infused glaze for added complexity.

Adjusting Glaze Consistency:

Easily adjust the consistency of the glaze by applying heat. If the glaze appears too thick, gently heat it in a saucepan over low heat while stirring until it reaches a thinner consistency suitable for brushing onto the turkey. Conversely, if the glaze is too thin, heat it over low to medium heat until it gently bubbles and reduces slightly, stirring constantly until it thickens to your desired consistency. Adjustments can be made based on personal preference.
