Ingredients:

1. For the Rice:
- 2 cups basmati rice
- 4 cups water
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 1 bay leaf
- Salt to taste
2. For the Chicken Marinade:
- 1 lb (450g) chicken, cut into pieces
- 1 cup plain yogurt
- 2 tablespoons ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
3. For the Biryani:
- 2 tablespoons ghee or coconut oil
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit lengthwise
- 1/2 cup chopped fresh cilantro (coriander)
- 1/2 cup chopped fresh mint leaves
- 1 teaspoon biryani masala powder (optional)
Instructions:
1. Prepare the Rice:
- Rinse basmati rice under cold water until clear.
- Soak rice in water for 30 minutes, then drain.
- Boil 4 cups water, add rice, spices, and salt.
- Cook rice until 70-80% cooked, then drain.
2. Chicken Marinade:
- Combine chicken with yogurt, ginger-garlic paste, spices, and salt.
- Marinate for at least 30 minutes.
3. Biryani Assembly:
- Heat ghee/oil in a skillet. Caramelize half the sliced onions and set aside.
- To the remaining onions, add marinated chicken and cook until done.
- Stir in tomatoes, green chilies, cilantro, and mint leaves. Cook for 2-3 minutes.
- Layer partially cooked rice over the chicken mixture.
- Sprinkle biryani masala powder evenly (optional).
- Cover and cook on low heat for 20-25 minutes until rice is fully cooked.
4. Garnish and Serve:
- Garnish Biryani Rice with reserved caramelized onions.
- Serve hot, accompanied by yogurt raita or a refreshing side salad.
