  • 2 cups basmati rice
  • 4 cups water
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 4 cloves
  • 1 bay leaf
  • Salt to taste

2. For the Chicken Marinade:

  • 1 lb (450g) chicken, cut into pieces
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste

3. For the Biryani:

  • 2 tablespoons ghee or coconut oil
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 2 green chilies, slit lengthwise
  • 1/2 cup chopped fresh cilantro (coriander)
  • 1/2 cup chopped fresh mint leaves
  • 1 teaspoon biryani masala powder (optional)

Instructions:

1. Prepare the Rice:

  • Rinse basmati rice under cold water until clear.
  • Soak rice in water for 30 minutes, then drain.
  • Boil 4 cups water, add rice, spices, and salt.
  • Cook rice until 70-80% cooked, then drain.

2. Chicken Marinade:

  • Combine chicken with yogurt, ginger-garlic paste, spices, and salt.
  • Marinate for at least 30 minutes.

3. Biryani Assembly:

  • Heat ghee/oil in a skillet. Caramelize half the sliced onions and set aside.
  • To the remaining onions, add marinated chicken and cook until done.
  • Stir in tomatoes, green chilies, cilantro, and mint leaves. Cook for 2-3 minutes.
  • Layer partially cooked rice over the chicken mixture.
  • Sprinkle biryani masala powder evenly (optional).
  • Cover and cook on low heat for 20-25 minutes until rice is fully cooked.

4. Garnish and Serve:

  • Garnish Biryani Rice with reserved caramelized onions.
