  • 2 salmon fillets (approximately 6 ounces each)
  • 1 cup quinoa
  • 2 cups broth or vegetable broth
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 small onion, finely chopped
  • 1 cup Brussels sprouts, halved
