Ingredients:
- 2 boneless, skinless chicken breasts
- 1 English cucumber, diced
- 2 large tomatoes, diced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives, pitted
- 1/2 cup crumbled feta cheese
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
1. Preheat the Grill:
Preheat the grill to medium-high heat.
2. Season and Grill the Chicken:
Season the chicken breasts with salt, pepper, and dried oregano. Grill the chicken for about 6-8 minutes per side or until cooked through. Remove from heat and let it rest for a few minutes. Slice the chicken into strips.
3. Prepare the Salad Base:
In a large bowl, combine the cucumber, tomatoes, red onion, kalamata olives, and feta cheese.
4.Prepare the Dressing:
In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, salt, and pepper.
