Goat Cheese Stuffed Sweet Potatoes

Ingredients:
- Medium sweet potatoes
- 2 cups goat cheese
- 1/2 cup sweet potato, scooped from inside
- 1 clove of garlic, minced
- 1 red onion, finely chopped
- 1 tablespoon olive oil
- Salt, pepper, and lemon to taste
- Optional toppings: chopped green onions, sour cream, or avocado
Instructions:
1. Preheat Oven:
Preheat the oven to 400°F (200°C).
2. Bake Sweet Potatoes:
Wash the sweet potatoes thoroughly and pat them dry.
Cut them in half lengthwise and place them on a baking sheet.
Bake for 45-60 minutes until tender.
3. Prepare Filling Mixture:
Once baked, carefully scoop out the inside of each sweet potato, leaving a thin layer attached to the skin.
