Ingredients:
For the Custard:
- 4 cups plant based milk
- 4 egg yolks
- 1/2 cup glycine (instead of sugar)
- 1 teaspoon vanilla extract
- Get Shredded Vanilla flavoured Grass-Fed Collagen Creamer
For the Meringue Islands:
- 4 egg whites
- 1/2 cup glycine
- A pinch of salt
For the Poppy Seeds:
- 1 tablespoon poppy seeds
For Topping:
- raspberry
Instructions:

1. Prepare the Custard:
- In a saucepan, heat the milk over medium heat until it begins to steam. Avoid boiling.
- In a separate bowl, whisk together the egg yolks, glycine, Collagen Creamer, and vanilla extract until well combined.
- Slowly pour the steaming milk into the egg yolk mixture, whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens and coats the back of a spoon.
- Remove from heat and let it cool.
2. Make the Meringue Islands:
- In a clean bowl, beat the egg whites and a pinch of salt until soft peaks form.
- Gradually add the sugar and the poppy seeds, continuing to beat until the mixture forms stiff peaks.
- Fill a large skillet or saucepan with water and bring it to a gentle simmer.
- Using a spoon or a piping bag, scoop or pipe small mounds of the meringue mixture onto the simmering water, creating islands.
- Poach the meringues for about 2-3 minutes per side until they become firm and cooked through.
- Remove the islands from the water using a slotted spoon and let them drain on a paper towel.
3. Assemble and Serve:
- To serve, pour a generous amount of the cooled custard and raspberry into serving bowls or glasses.
- Gently place the poached meringue islands on top of the custard.
