Beef and Bean Stuffed Sweet Potatoes

Ingredients:
- Medium sweet potatoes
- 1/2 pound (225g) lean minced beef
- 1/2 cup kidney beans, drained and rinsed
- 1/2 cup corn kernels
- 1/2 cup tomato sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: grated cheese, chopped green onions, sour cream, or avocado
Instructions:
1. Preheat Oven:
Preheat the oven to 400°F (200°C).
2. Bake Sweet Potatoes:
Wash the sweet potatoes thoroughly and pat them dry.
Pierce the sweet potatoes a few times with a fork or knife.
Place them on a baking sheet and bake for 45-60 minutes until tender.
3. Prepare Filling:
While sweet potatoes are baking, heat olive oil in a skillet over medium heat.
Add minced beef and cook until browned, breaking it up with a spoon.
Add minced garlic to the skillet and cook for an additional minute.
Stir in kidney beans, corn kernels, and tomato sauce.
Season with salt and pepper to taste. Simmer for 5-10 minutes.
4. Assemble Stuffed Potatoes:
Slice sweet potatoes lengthwise and fluff the flesh with a fork.
Divide the beef and bean mixture evenly among the sweet potatoes.
